Kimberly Longhofer

Founder & President

Kimberly Longhofer is a nurse, a dedicated wife and mother of four, and the founder of Sugar Smart Kids. She was diagnosed with type 1 diabetes at age 11 — a life-changing moment that not only shaped her own health journey but also sparked her lifelong passion for helping others.

Growing up, Kimberly stayed active in sports and loved always being on the go. Her diagnosis came unexpectedly, but it taught her resilience, strength, and the value of community support. During her early years managing diabetes, she became deeply involved in advocacy and volunteered as a junior ambassador with the Juvenile Diabetes Research Foundation (now known as Breakthrough T1D), as well as with the Special Olympics and United Way.

In recognition of her significant contributions to the community, Kimberly was honored as an Olympic torch bearer in 2002 — a moment that symbolizes her enduring dedication to service and empowerment.

Professionally, Kimberly is a nurse by discipline with 15 years of experience in chronic care management, home health, and healthcare operations. Despite her professional achievements, her heart has always remained with the diabetes community.

She founded Sugar Smart Kids to create a safe, supportive space for children living with type 1 diabetes and their families. Her mission is to empower kids to feel strong and confident, connect families to vital resources, and remind every child that they are never alone on this journey.

When she isn’t working or volunteering, Kimberly enjoys spending time with her husband, their four children, and their three dogs — often cheering on the kids at the baseball field or enjoying family activities together.

Through Sugar Smart Kids, Kimberly is dedicated to helping children make sweet, smart choices and live boldly with diabetes.

Christopher Davis

Vice President

Chris Davis is a UPS executive who retired in 2019 following a 42-year career with the company. He had responsibilities for Human Resources, Public Affairs and philanthropic grants from The UPS Foundation, the charitable arm of UPS.  

Every community has a leader who sparks others to action. During his UPS career in Texas, Chris Davis provided a full power source - typically volunteering 50 hours or more per month. 

Chris was a devoted volunteer with the Juvenile Diabetes Research Foundation (now known as Breakthrough T1D) and Camp Sweeney, the largest camp for children with Type 1 Diabetes in the world. 

Auto crashes are a leading cause of death among teenagers in Texas. Chris worked to keep teens safe by volunteering with Boys & Girls Clubs of America - facilitating driver safety training for over 100 teenagers annually.

In June 2018 Chris coordinated the free transportation of an 1100-pound piece of the USS Arizona from Hawaii to Amarillo, Texas. The sacred artifact from the USS Arizona is now displayed at the Texas Panhandle War Memorial.

A major focus of Chris’ volunteer outreach was working with programs and projects that impacted the men and women who serve in the U.S. Armed Forces and their families. Chris’ enthusiasm for veterans inspires others to join him. An example occurred in 2015, when Chris organized an ‘army’ of 700 UPS volunteers who supported the National Veterans Wheelchair Games in Dallas, Texas.

Chris provided volunteer support on the Board of Directors at several nonprofit organizations including the Smithsonian-affiliated Frontiers of Flight Museum, Special Olympics Texas and Boys & Girls Clubs of Dallas.

In 1993 Chris began volunteering for Special Olympics Texas. He involved fellow UPS employees, and the volunteer event grew over time to become the largest annual UPS volunteer event in the State of Texas.

For the Games, Chris coordinated Athlete Village - a giant circus tent where the Special Olympics athletes enjoy music, games and entertainment.  It’s a memorable, joyous activity for the athletes and volunteers.

In recognition of his significant volunteer contributions to the community, Chris has received a Texas-sized list of honors.   He was selected by United Way and the City of Dallas to represent North Texas as a ‘community hero’ in 1996 - carrying the Olympic Torch as part of the 1996 Summer Olympic Games Torch Relay.  Chris received the President’s Gold Medal Volunteer Service Award from both President Barak Obama and President Donald Trump.  He received UPS’ highest honor for community service - The West Region Jim Casey Community Service Award twice - in 2016 and 2017.  In 2019 Texas Governor Greg Abbott commissioned Chris as an Admiral in the Texas Navy in recognition of his four decades of volunteer service to the citizens of Texas.

Eric Longhofer

Administrative Officer

Eric Longhofer serves as the Administrative Officer for Sugar Smart Kids. With over 15 years of experience in operations, Eric brings a strong background in organization, leadership, and efficiency to our team.

Beyond his professional expertise, Eric has played an important personal role in supporting Kim through her diabetes journey over the past six years. His dedication, steady presence, and behind-the-scenes work have been vital not just at home, but now in helping guide the growth and impact of Sugar Smart Kids.

Eric is passionate about building a strong foundation for the organization so that every child and family we serve feels supported, empowered, and connected.

When he’s not working, Eric enjoys spending time with family, cooking, and computer games.
